Person in charge unable to log in to view certificates so at time of inspection unable to verify state approved training program. Current state approved certifications are through FRLA and all expired.

Observed sausage gravy at temperatures of 110-114F stored in steamer unit next to meat reach in cooler. Employee stated it was moved to steam table 2 hours prior and placed pan of gravy on flat top grill to reheat to minimum temperature of 165F or higher. Sausage gravy (110-114F - Hot Holding)
