  • [14-11-5] Equipment in poor repair. In prep area, interior of left grits hot holding unit, sides have finish worn off exposing insulation.

In front line steam table, sausage gravy (115F - Hot Holding, reheated to 166f). Item heated and placed in steam table 2.5 hours prior per manager. Manager moved to cook line to reheat.
