Employee stated cheese was put in cooler 30 minutes earlier but was filled over the fill line. Employee removed some cheese from pan and put in bottom of cooler. In reach in cooler on cook line, raw chicken (48F - Cold Holding). Employee stated she brought from walk-in cooler to reach in cooler 1 hour prior. Employee put chicken in ice bag in walk-in cooler to bring temperature down.
[23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Multiple gaskets on reach in cooler and reach in freezers soiled with food debris.
[33-11-4] Missing drain plug at dumpster. On both dumpsters out back of establishment dumpsters missing drain plug.
[36-73-4] Floor soiled/has accumulation of debris. Floor in walk-in cooler soiled with food debris and build up. Also, floor under cook line equipment soiled with grease buildup in spots.

Also, in walk-in cooler two pans of raw steak stored on top shelf above cooked chicken. Employee moved raw steak under cooked items.
[40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Multiple employee jackets and backpack on bottom shelf of storage rack by back door on top of gallons of sliced jalapenos and hot sauce.
