At current rate of cooling, item will not cool from 135F to 70F in a total of 2 hours. Advised operator to quick chill both items.
  • [12A-16-4] Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Observed chef handle raw chicken then began to handle clean utensils at flat top grill; no hand wash. Chef cleaned and sanitized utensils and washed hands.
