Operator moved shredded cheese and cut tomato to walk-in freezer, items retemp at 40 minutes, both 38f.
[24-08-4] Equipment and utensils not properly air-dried - wet nesting. At dish area, metal pans on bottom shelf have wet nesting.
[01B-02-5] Stop Sale issued on time/temperature control for safety food due to temperature abuse. At make line top section of reach-in cooler, sliced cheese (46F - Cold Holding). Cheese placed in reach-in cooler 4.5 hours earlier.
