[24-08-4] Equipment and utensils not properly air-dried - wet nesting. Water observed between stacked metal pans on storage rack in the dishroom.
[31A-10-4] Equipment drain line draining into handwash sink. Portable air conditioning unit at far end of make line has the drain line draining into the handwash sink. Also, handwash sink partially blocked by the air conditioning unit. Employees moved unit and reran drain line to a floor drain. Also, mixer cup in bar handwash sink, operator removed the cup.
[36-73-4] Floor/wall/ceiling/vent soiled/has accumulation of debris. Floor under server line soda machine is soiled. Fan guards in the walk-in cooler have dust.
[12B-13-4] Opened employee beverage container in a cold holding unit with food to be served to customers. Open employee beverage stored in bottom of salad reach-in cooler. Also, open employee beverage in left door of middle reach-in cooler on the cooks line. Both beverages were removed and discarded.
[41-10-4] Toxic substance/chemical improperly stored. Spray bottle of sanitizer stored on take out area rack on a plastic tray above customer food order. Employee moved spray bottle to shelving in the take out ordering area.

[24-08-4] Equipment and utensils not properly air-dried - wet nesting. In back hallway on shelf by mop sink, pans stacked before properly drying.
[33-20-4] Grease on the ground and/or pad around grease receptacle. Grease build up around the back of both dumpster.
[14-69-4] Ice buildup in reach-in freezer and/or walk-in freezer. In reach in freezer on server station with ice cream has ice build up.
[23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. On soda machine closest to dish area, around soda nozzles has build up.
[33-16-4] Open dumpster lid.
[01B-01-4] Dented/rusted cans present. See stop sale. 2 cans of mandarin oranges, dented.
[12A-07-5] Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee on cook line went from handling raw shrimp to cooking on grill changing gloves but no handwashing. Also, dishwasher handled clean dishes after handing dirty dishes with no handwash in between. Also, employee took trash out and when returned he went to the line and put gloves on and started cooking with no hand wash.
[03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On cook like by grill, cheese in reach in cooler stocked over the fill line of the pan temping at 58F. Cook states he just put the cheese in that pan 10 minutes ago. Manager had cook take some back to walk-in cooler so cheese would not be over fill line.
[03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On cook line in warming unit, cooked chicken at 107F-114F. Manager stated it was cooked 15-20 mins prior but it was about to be throw out because they only keep it hot for 15 mins because of quality.
[31A-09-4] Handwash sink not accessible for employee use at all times. Sanitizer bucket in handwash sink by dish area.
[31A-11-4] Handwash sink used for purposes other than handwashing. Near dish in handwash sink server tried to rinse off dirty fajita wooden plate. Manager stopped her and put plate in dish. Sanitizer bucket in handwash sink by dish area.
