[22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime observed ice chute on both soda machines in dining area, both soda guns and holsters in bar area, and nozzle on custard machine in bar area soiled. Operator had employee clean ice chutes, soda guns and holsters and nozzle at custard machine during this inspection. Also, portable cutting board in prep area soiled/ stained. Also, area around ice chutes in large ice machine soiled.

Reach-in cooler drawers below grill unable to maintain temperature of 41F and below. Ambient temperature 48F-54F. Observed bottom drawer on left does not fully close. Operator stated new reach-in cooler drawers will be installed within next couple of days. Observed new piece of equipment outside of managers office area.
[03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. goat cheese, sliced cheddar cheese, raw beef, pork belly (48F-52F - Cold Holding) in reach-in cooler drawers below grill. Operator stated items were placed in cooler before lunch. Operator has new cooler waiting to be installed. Discussed with operator to ice foods or remove to nearby cooler to chill foods.

[41-27-4] Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Quaternary +500ppm); sanitizer bucket on cook line and front service line exceeds the maximum concentration. Test strip was blue. Operator had employee remake sanitize solution and retested 200ppm.
[53A-05-6] No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
