[06-09-1] Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed ten packs of salmon defrosting in the vacuum with an internal temperature of 34°F. The chef open the packages and put them in a reach in cooler.

[29-09-4] Faucet/handle missing at plumbing fixture. Observed one the hand sinks in the mens restroom is missing the hot water handle.
[08B-38-4] Food stored on floor. Observed two cases of plastic water bottles on the walk-in cooler floor.

[06-01-5] Time/temperature control for safety food thawed in an improper manner. Observed individually wrapped steaks and bags of shrimp in separate containers defrosting in standing water. The chef moved the item to the triple sink and opened the cold water.

As per the cook the steaks were put in line approximately two hours ago. The cook moved the meat to a freezer for a quick chill.

[16-32-5] Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Observed the triple sink and dish machine uses chlorine and the establishment has quaternary test strips.
