Place there approximately 1 hr ago. Unit lid was open and also missing pans inside flip top area to keep cold air from escaping when lid is open. Employee kept lid closed. Re-temp @ 43F.
- [09-01-4] Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee handling bread with bare hands and placing on grill top for few seconds then again with bare hands removing same bread to continue preparing with stuff lobster meat.
