- [35A-20-4] Dead rodent present. Dead mouse observed in garbage enclosure. Operator had employee clean up and discard of.
- [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters above cook line soiled with grease build up.
- [22-16-4] Reach-in cooler interior/shelves have accumulation of soil residues. Interior of reach in cooler at drive thru window soiled with food debris.
- [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In warming units on main make line in kitchen, chicken wings (128F-130F - Hot Holding, retemp @ 175F-178F); chicken nuggets (127F - Hot Holding, retemp @ 172F-176F). Operator stated chicken wings and chicken nuggets were cooked 10 minutes prior. Employee dropped items back into fryers and brought above 165F before hot holding again.
