- Toxic substance/chemical improperly stored. Case of all purpose and floor cleaner stored over a box of wine. Operator appropriately reorganized items at the time of inspection.

- Soap dispenser at handwash sink not working/unable to dispense soap. Broken soap dispenser in handwashing sink next to warewashing area. Operator placed an order for a new dispenser.

Cold hold- milk bath 48F ( 11:00-2:45). Cold hold- reach in cooler- raw tuna 45F, snapper 40F, tuna dip 45F (11:00-2:50). Cold hold- expo- left- Cole slaw 42F, right- coleslaw 47F ( 11:00-2:56).

Observed establishment breading chicken and seafood using same milk bath/egg wash and same breading flour. Chef corrected by utilizing 2 breakers and 2 baths/washes. Observed breaded grouper cooked prior to correction.
- Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Calibrated thermometers with chef. Inspector calibrated to 32F, chef 33F, took temp of tuna dip in reach in cooler- inspector temp was 45F, chef 57F.
- Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Observed hanging thermometer in reach in cooler registering 50F, ambient temp check 41F.

- Handwash sink not accessible for employee use at all times. Multiple floor mats stored on Metal rack/shelf stored in front of hand sink next to 3 compartment sink.

- Upon callback, observed sliced sausage 41f, sliced cooked chicken 31f, sliced ham 45f (less than 4 hours per employee), meatballs 40f, sliced tomatoes 45f (less than 4 hours per employee in pizza ,are bar cooler upper. Also observed fresh sliced mozzarella 40f, ricotta cheese 40f, roasted garlic in oil 40f in pizza make bar cooler lower. Observed fresh mozzarella 45f, raw ground beef 46f, sliced ham 46f in walk-in cooler at establishment. Observed cooler door left open for extended period of time during inspection and employee stated they are frequently opening door for preparation of items beginning at 9:00am.

- Presence of insects, rodents, or other pests. Upon inspection, observed approximately 14 dead flying insects in the following locations: 1 in kitchen area on the floor, 2 on the floor in dry storage, 2 on the floor behind front counter, 9 in dining room on the floor and window ledge. Manager/employees began cleaning up the dead flying insects during inspection.
- Current Hotel and Restaurant license not displayed. Upon inspection, observed current license available expired as of 06/01/26. Manager was able to print current license during inspection.

- Food stored on floor. Upon inspection, observed case of French fries stored on the floor in walk-in freezer.
- Stored food not covered. Upon inspection, observed storage pan of lettuce stored uncovered in walk-in cooler.

- Stop Sale issued on time/temperature control for safety food due to temperature abuse. Upon inspection, observed macaroni salad 51f in upper make bar cooler, over 4 hours per employee.
- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Upon inspection, observed raw shrimp 46f in walk-in cooler at establishment. Employee stated cooler door has been opened frequently for preparation of various items today. Employee was instructed to place shrimp in colder holding unit or to place on ice. Also observed macaroni salad 51f in upper make bar cooler, over 4 hours per employee.
- Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Upon inspection, observed 0 ppm reading on dishmachine at establishment. Employee replaced empty sanitizer container and 100 ppm reading was observed.

- Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee cutting limes at bar area without glove. Employee voluntarily disposed of all above items that had been in barehand contact.
