- Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On the cook line observed, tomato sauce (127F - Hot Holding); chicken soup (122F - Hot Holding) operator stated foods are reheated on cook line and moved to steam table 15 minutes prior to inspection. Operator stirred foods and turned up heat.
- Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the walk in cooler, observed a container of raw ground beef stored above a case of raw shelled eggs and a box of butter. Operator rearranged for proper storage.

- Raw animal food not properly separated from ready-to-eat raw animal food covered under a consumer advisory. In the walk in cooler used for raw meats, observed raw sea bass fish stored above raw tuna that is served raw under a consumer advisory. Operator rearranged for proper storage.
- Handwash sink used for purposes other than handwashing. Hand wash sink used as dump sink and ware washing located at dish machine area and meat cutting room area. Operator removed all items from hand sink.
- Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. bar Dishwasher (Chlorine 0ppm); Dishwasher (Temperature 160). Operator began to set up three compartment sink.
