  • [03D-07-5] Time/temperature control for safety food removed from cold holding for necessary preparation rose above 41 degrees Fahrenheit during the preparation process and was not cooled back down to 41 degrees Fahrenheit within 4 hours. -precooked, blended philly meat with onions began prep at 9:24am per sticker/manager, temperature checked at 2:30 with ranges of 45-49F at various portions.

  • [03D-15-4] Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. -ambient cooling method involving stacked multiple layers of individual portioned containers inside of a large lexan bulk container. Advised to ensure beef cools back down to 41F prior to stacking any containers or avoid stacking entirely. Must be in compliance upon the next unannounced inspection
