- [21-08-4] Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. At bar area and kitchen, Sanitizer Bucket (Quaternary 0ppm). Operator stated quaternary hasnt seemed to be working, made bucket with chlorine rechecked at 100ppm).
- [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Gaskets on keg reach in cooler and reach in cooler on cook line soiled with food debris.
- [03C-89-4] Establishment conducts non-continuous cooking of raw animal foods without written procedures approved by the division. Establishment partial cooks raw chicken wings in oven, then cools them down and cook in fryer rest of the way per order. Inspector provided non-continuous cooking paperwork to manager.
- [33-23-4] Grease receptacle/dumpster not on proper pad/nonabsorbent surface. Dumpster currently on grass/dirt. Manager stated dumpster enclosure has just finished being built and dumpster will be located there.
- [22-43-4] Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple Sink (Quaternary 0ppm). Manager stated quaternary sanitizer has not been working probably. Manager emptied three compartment sink and will make new with chlorine.
