Live, small flying insects found. Observed 17 flying insects in the following locations: 3 in corner by bar with license and ServSafe certificates, 1 flying above bar stemware, 4 around dump sink in corner of bar, 6 on coffee container on bar shelf, and 3 on spray gun tubing junction above ice bin behind bar.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach-in cooler by cook line since yesterday: cooked sausages 59f, butter 49f, oyster meat 51f, and grouper 49f. See stop sale. In reach-in cooler on cook line shrimp at 49f for 1 hour. Operator began an ice bath and brought shrimp down to 41f.
