Food items stored in pull out cold holding drawers during callback: raw chicken dated (43 F - Cold Holding) Discussed monitoring all cold holding units to ensure temps are being maintain at 41 degrees or below.
- Ecolab is scheduled to come out and service the chemical dispenser at the three compartment sink. No quaternary sanitizer buckets set up during the call back inspection. Discussed diluting chemical with water and testing it with their quaternary test strips to ensure it is at the proper strength as they wait for the dispenser to be serviced.
