  • [22-08-4] Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior top of microwave on prep table soiled. Also, ovens have an accumulation of debris.

  • [42-01-4] Wet mop not stored in a manner to allow the mop to dry. Observed one mop at mop sink stored in a manner for mop not to dry properly.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked chicken, cooked beef, cut tomatoes, cut lettuce, sliced pepper jack cheese (44F-51F - Cold Holding) in front display case. Discussed with employee morning procedures. Display cooler case turned on upon arrival and food placed in display case before allowing the temperature of cooler to reach 41F and below. Employee placed some of the items in walk in freezer to chill foods. Foods in display cooler case approximately 3 hours.
  • [14-74-7] Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed deli case cooler at front counter unable to maintain temperature of 31F and below. Ambient temperature on deli case cooler across from bread rack 47F and other deli case cooler ambient temperature 50F. Observed dust build up on fan and coils.
  • [23-24-4] Buildup of food debris/soil residue on equipment door handles. Observed handles on cookie trays soiled.
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed employee Tylers employee food safety training expired in 2024. Hes been employed here since Nov.ember 2025
  • [14-11-5] Equipment in poor repair. Observed gasket on walk-in-cooler torn.
