All the following items were stored in the top section of the reach in cooler in the grill area Cut lettuce (55F - Cold Holding); Cut tomatoes (54F - Cold Holding); Provolone cheese (53F - Cold Holding); Swiss cheese (53F - Cold Holding); Cheddar cheese (54F - Cold Holding); Cooked mushrooms (55F - Cold Holding) Manager stated all the items were stored in the reach in coolers for approximately 1 hour. Manager placed bags of ice on the items.
