- Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on the cook line: Butter (95F - Hot Holding). Operator stated it was out for approximately 1hr and gets disposed of at the end of breakfast. Reviewed and emailed time as a public health control.
- Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed their sanitizer bucket at 10ppm chlorine. Operator remade it to 100ppm.
- Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed the ceiling vent in the back corner of the storage area with black buildup.

Observed dish machine with a chlorine reading of 0ppm. Operators set up 3 compartment sink with a reading of (chlorine 100ppm).

- Handwash sink not accessible for employee use at all times. Observed hand sink in kitchen with mixing bowls stored in sink. Operator removed bowls.
- Cardboard used to line food-contact shelves. Observed cardboard lined shelves on dry storage rack near rear exit door of kitchen.

Observed cooked beef (45F - Cold Holding); cooked pork ribs (44F - Cold Holding) in the walk in cooler. The operator to monitor walk in cooler temperature.
