Do not store time/temperature control for safety food in this unit until the unit is repaired. -Reach in salad cooler 51.5F ambient, foods inside slightly elevated but had also been in and out of unit for prep. Left cooler closed for several minutes but saw no change in temperature. Operator moved all food out of this cooler into the walk in until it is serviced and can hold foods at 41F and below. I observed temperature of cooler drop throughout inspection, was 45F when I left.
