Per operator, its were held out of temperature for less than 1 hour. Operator moved items to walk in cooler to chill.

  • [03D-15-4] Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. cooked chicken (93F - Cooling for 1/2 hour at 1:25, 91F at 1:55) cooling in deeply filled covered container in walk in cooler. Operator removed covered and placed in freezer to increase cooling rate.
