- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the front line in ice: Butter (47F - Cold Holding). Operator stated it had been out for approximately 2hrs. Operator completely surrounded the product in ice.
- Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed their dish machine at 0ppm chlorine. Operator swapped out the chlorine and retested it at 100ppm.
- Raw animal food stored over or with unwashed produce. Observed raw shell eggs stored over pickles in the walk in cooler. Operator moved the pickles.
- Handwash sink used for purposes other than handwashing. Observed an employee rinse a knife in a hand wash sink. Reviewed with the employee on the sink proper use.
- Wet wiping cloth not stored in sanitizing solution between uses. Observed multiple wiping cloths stored on the cook line. Reviewed with the operator on proper storage.

Observed multiple frozen foods prepared onsite not date marked.Person in charge stated it was placed in the freezer on 8/8/26 and date marked accordingly.

See stop sale. Observed ROP salmon beginning to thaw in walk in cooler and not removed from packaging. Operator thawed fish properly.
- Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed some shelving in the walk in cooler rusting.
- Carbon dioxide/helium tanks not adequately secured. Observed 2 Co2 tanks not secured at the bar. Operator secured them.
- Exterior door has a gap at the threshold that opens to the outside. Observed a gap at the bottom of the back door near the dish machine.

Owner stated the items were cooked and frozen on the same day, then placed in the reach in cooler early today. Owner was informed and placed a date mark of 8/10 on the items.

The operator stated the above foods have been stored for approximately 1 hour. The operator voluntarily discarded the cheesecake. The operator took the sour cream out of the double container for proper cold holding. The operator will monitor the temperature. Observed cooked chicken (41F - Cold Holding); cooked pork ribs (42F - Cold Holding) in the walk in cooler.
