Raw eggs stored in the top portion over margarine in the bottom section of the make table on the cook line. Employee removed the margarine.
- Toxic substance/chemical improperly stored. Spray bottles containing cleaning fluid stored next to single service items in the front counter area. Employee removed the bottles.
- In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Handles of scoops not stored above the top of sugar and flour in containers in the kitchen. Employee put on gloves and removed the scoops.
- Ceiling/ceiling tile shows damage or is in disrepair. 5 ceiling tiles in the dining room water damaged.
- No drainboards or equivalent provided for soiled items and/or air drying cleaned items. No drain board for drying on the dishwasher.

Observed dishwasher machine at 000 parts per million chlorine sanitizer. Operator primed dishwasher machine and retested at 100 ppm.
- Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed bbq ribs and chili in walk-in freezer not properly date marked. Employee stated the above items had been prepare onsite more than 24 hours prior. Operator corrected above issues to meet inspection standards.

Observed an employee handle soiled sheet pans then handle clean metal food containers without washing hands. The metal containers were rewashed. The employee was educated on proper handwashing procedures.

Observed cooked beef (45F - Cold Holding); cut tomatoes (45F - Cold Holding); cooked beans (44F - Cold Holding) in the walk in cooler. Observed ambient temperature of the cooler at 40F. The operator to monitor the temperatures and take corrective action if necessary. Observed cut tomatoes (48F - Cold Holding) at the table side guacamole station. The operator stated the cut tomatoes had been held for approximately 1 hour. The operator added ice to cool the tomatoes.
- Raw animal food stored over canned/bottled drinks. Observed raw beef stored over containers of aguas frescas in the walk in cooler. The operator properly stored the raw beef.
- No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chlorine test kit for the dishmachine sanitizer solution. Observed no sink and surface sanitizer solution test kit for the three compartment sink.
- Old labels stuck to food containers after cleaning. Observed an old label on a container with cooked shrimp in the reach in cooler. The operator removed the old label and placed a correct date mark on the container.

As per manager delivery came and left the door open for about 1 hour.
