- Food with mold-like growth. See stop sale. Upon inspection, observed approximately 8 heads of cabbage with mold-like growth and 1 head of iceberg lettuce with mold like growth in walk-in cooler at establishment.
- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Upon inspection, observed pancake batter 53f (less than 4 hours per employee) on cook line prep table. Also observed milk 47f in front counter reach-in cooler (less than 4 hours per employee).
- Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Upon inspection, observed white gravy in upright reach-in cooler # 1 not date marked. Less than 7 days per employee.
- Food stored on floor. Upon inspection, observed bag of onions stored on floor in walk-in cooler at establishment.
1716 AIRPORT PULLING RD S, NAPLES · Collier County
- Live, small flying insects found there are approximately 25 to 30 small flying insects in the kitchen and ware washing area, small flying insects are landing on a band saw, cutting boards and unwashed plates and utensils in the ware washing area.
- Raw animal food stored over/not properly separated from ready-to-eat food. In the under counter cooler at the entrance to the cook line raw chicken is stored above flour tortilla. Operator moved the chicken to proper storage.
- Food-contact surface soiled with food debris, mold-like substance or slime. There are dried meat particles on and around the blade of the band saw in the kitchen.
- No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ there is no certified food manager on duty with 4 employees handling food.
- No person in charge present during hours of operation. Upon arrival the person in charge was requested, the reply was that there is no one in charge.

- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the left side reach in cooler on the line: Sliced tomatoes (51F - Cold Holding); Chopped lettuce (51F - Cold Holding); Cheese (51F - Cold Holding); Ambient (47F - Cold Holding). Operator stated it had been setup approximately 3hrs ago. Operator moved the food to a different cooler and called a company.
- Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Observed the tags sorted by month but not day.
- Cutting board has cut marks and is no longer cleanable. Observed multiple heavily grooved cutting boards on the cook and prep areas.
- Employee personal food not properly identified and segregated from food to be served to the public. Observed employee food stored with customer food in a reach in and walk in cooler. Reviewed with the operator on proper storage.
