Held on ice- shell eggs 57F, pulled eggs 56F, shredded cheese 52F (9:00-10:14) employee replaced ice and placed lids over food. Equipment was unplugged, employee placed all food on ice and plugged it back in.

Employee plugged unit back in and Employee placed all food from drawers in walk in freezer to reduce temperatures. Recheck- salmon 43F, trout 41F, grouper 43F, ground beef 39F, pork rib 41F.

Observed exposer to sanitizer less than 30 seconds. Educated employee on proper sanitization and employee rehashed and sanitized dishes.
  • Sink compartments of three-compartment sink too small to accommodate utensils or equipment. Observed three compartment sick is too small to accommodate size of equipment used. Specifically full size sheet trays and large cutting boards.
  • No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed four cooks in kitchen and two baristas at front counter with no certified food manager present. Certified food manager arrived before end of inspection.
