- Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm); operator fixed at time of inspection, end result, Dishwasher (Chlorine 100ppm).
- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler in the back food prep area across from walk in cooler, observed cooked chicken (49F - Cold Holding); sour cream (50F - Cold Holding); cooked beef (52F - Cold Holding). Operator stated foods have been in reach cooler in less than an hour prior to inspection. Cooler is in defrost mode. Operator added decided to go on time control and stated foods will be discarded at 2:30pm. Establishment has time stamps on all foods.
- Handwash sink used for purposes other than handwashing. Observed both hand sinks at the inside bar used at dump sinks. Discussed with operator hand sinks are for hand wash only to prevent and reduce cross contamination. Operator removed strainer and products away from hand sinks.
- Observed Wet mop not stored in a manner to allow the mop to dry. Operator hung mop.

- Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the walk in cooler observed, raw ground sausage stored above whole veal steaks. Operator rearranged for proper storage.

In the reach in cooler across from oven at front line observed Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
