- At time of follow up inspection current license expired 06/01/2026. 509.241(1)FS and 61C-1.002(6) FAC: 509.241(1) LICENSES; ANNUAL RENEWALS. Each public lodging establishment and public food service establishment shall obtain a license from the division. 61C-1.002(6) Renewal - The licensee is responsible for renewing the license prior to the expiration date. Any public lodging establishment or public food service establishment operating on an expired license is deemed to be operating without a license, and subject to the penalties provided by law.
- At time of follow up inspection, inside walk in cooler okra 41F, Lima beans 41F, green beans 40F, collard greens 40F, Mac and cheese 42F, coleslaw 42F, boiled egg 41F, fish on ice 36F. Ranch and milk no longer stored in bar counter reach in cooler and in walk in cooler at 41F each. In cook line reach in cooler, time/temperature control food for safety out of temperature; sausage 64F, cheese 67 F, Turkey 66F and ambient air of reach in cooler at 69F. Per operator sausage placed in cooler 30 minutes prior, turkey and cheese place in cooler around an hour during rush. Operator removed all items to walk in cooler. Walk in cooler at ambient air 41F. Discussed with employee utilizing ice bath inside of reach in cooler for products needed frequently for dinner rush to lower frequency of opening of walk in cooler door.

- Warewashing sanitizing solution exceeding the maximum concentration allowed. Upon inspection, 3 compartment sink quaternary sanitizer reading 500ppm. Per manufacturer instructions, sanitizer is to be 150-400ppm. Operator filled sanitizer sink with regular water and brought sanitizer down to 400ppm and called for recalibration of dispenser.
- Equipment in poor repair. Upon inspection, dish machine digital display is damaged and unable to display information. Per operator, display has been broken for a week. Operator requested repairs during inspection.
- Bowl or other container with no handle used to dispense food. Single use plastic cups and bowls used for scoops for seasoning, coleslaw, and dessert toppings. Operators removed cups and bowls during inspection.

- Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Pan of fried shrimp without time marks held at room temperature at cookline. Manager stated the shrimp has been held at room temperature since 11:30 and added the proper time marks during this inspection.
- Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline placed a cooked steak into a foam tray with bare hands for a customers order. Inspector had the employee begin reheating the steak to 145F, wash hands, and put on gloves.
- Raw animal food stored over/not properly separated from ready-to-eat food. 1. Pan of raw shrimp stored directly above pan containing cooked noodles inside walk-in cooler. 2. Wrapped portions of raw frozen chicken stored on shelf above wrapped portions of frozen cooked noodles inside reach-in freezer. Manager moved both raw items away during this inspection.
- Handwash sink used for purposes other than handwashing. Plant and two vases stored down inside handwash sink in back of kitchen. Manager removed the items from the sink during this inspection.
