Per operator all items stored on reach in cooler for 3 hours. Operator removed all items to walk in cooler.
- Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On steamer near cook line; cooked beans (125F - Hot Holding). Per operator cooked beans stored on steamer for 3 hours. Operator increased steamer temperature to max.

- Raw animal food stored over/not properly separated from ready-to-eat food. In the reach in cooler across from fryers on cook line, observed a container of raw chicken skewers stored above a container of wrapped ready to eat salmon roll. Operator rearranged for proper storage.
- Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. On the cook line observed sauce prepared hot at 60F. Operator stated it had been removed from cold holding 15 minutes prior to inspection. Discussed operator sauce needs to be time marked.
- Handwash sink used for purposes other than handwashing located at the bar. Observed being used as dump sink. Operator removed items away from hand sink.
