- Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine sanitizer reading 00ppm chlorine. Establishment stoped using the dish machine called the technician and set up the three component sink to properly sanitizer dishes and equipment.
- Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. No vacuum breaker on the hose bibb next to the three compartment sink.

- Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Tom yum soap stored in the walk in cooler with no date. Employee stated the soup was prepared on 8/10. Employee placed a date mark on the soup.
- Handwash sink not accessible for employee use at all times. Soiled pans stored in the hand wash sink in the dishwasher area. Manager removed the pans.

- Time/temperature control for safety food re-served to customers. Observe, weight staff removing butter portion control cups from guest tables and returning them to bulk bin tub in reach in cooler at waitress station in kitchen.
- Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw salmon and raw sausage in walk-in cooler, stored over cooked and sliced corned beef and tub of coleslaw. Repeat from last inspection 4-9-26
