  • Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline placed a cooked steak into a foam tray with bare hands for a customers order. Inspector had the employee begin reheating the steak to 145F, wash hands, and put on gloves.

Manager stated the shrimp has been held at room temperature since 11:30 and added the proper time marks during this inspection.
