- Stop Sale issued due to food not being in a wholesome, sound condition. Observed a Pack of crackers with condensation water splatter.
- No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Chef went to commissary kitchen and picked up both chlorine and quaternary test strips.
- Food stored in a location that is exposed to splash/dust. Observed a pack of crackers sealed in Plastic with water splatter from condensation leak from ceiling. Employee removed food items off of food contact surface and from affected area and placed on shelf.
- Condensation or other drainage not disposed of according to law. Observed condensation from ceiling, light shield and AC vents dripping onto floor in buckets, and on food contact surface table. Observed water splatter on a pack of crackers sealed in plastic. Do not use affected food area until repairs are made..

- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed rice 47F cooling overnight. Stop Sale. Operator discarded rice.
- No hot running water on left side of three-compartment sink.
- Standing water or very slow draining water in mop sink.

- Container of medicine improperly stored. Observed a container of medicine stored on a flat surface on top of the reach in cooler. The operator discarded the medicine.

Observed an employee rinse off a plastic food container and put away as clean without washing or sanitizing. The operator placed the container with other soiled dishware for later cleaning.

- Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed a quaternary spray sanitizer exceeding 500ppm. The operator diluted .the solution to 200ppm.
- Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed an employee wearing gloves leave the work station, walk to the walk in freezer, then return and handle pizza crust without changing gloves. Educated the employee on when to change gloves.
- Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked chicken (50F - Cold Holding); raw grouper (46F - Cold Holding); raw ground beef (45F - Cold Holding) in the new reach in cooler on the cook line. The operator removed the potentially hazardous foods and stored in an alternate cold holding unit.
